Big Kitchens

Barracks, hospitals, factories, schools and big hotels fall within this scope. They have some adjoining rooms other than main kitchen area. In addition to main equipment, the large and deep pots used in the big kitchens are the main sources of heat, moisture and smell especially with their lids being opened. Two applications are shown in figure 14.53 and 14.54, respectively. Ceiling is generally equipped with suction nozzles from wall to wall for modern applications as shown in Figure 14.55. Efficiency of removable and washable oil filters is very high (99,8%). Fresh air is blown onto the counter tops from both sides.
